Breakfast is the best meal of the day, and weekends are the party-time of breakfasts. This post is inspired by my pops, who makes a simple, yet delicious breakfast his mother made him when he was growing up in Pakistan: mixing leftovers with eggs and lots of love.
Simple & perfect for easy sundays.
Start with what you’ve got in your fridge. We had leftover Pakistani chicken with salan (sauce). Anything saucy, spicy, and packed with flavor is golden for this.
Then you add yo eggs.
Add salt + pepper, jalapenos (must stay working on that spice tolerance), fresh chopped tomatoes if you desire.
Put lid on to steam for 30 secs – 1 minute
And then, bask in the beauty.
Now pour some coffee, listen to some Etta James, and let’s talk about how awesome Sundays are.
